How are Beaujolais Nouveau wines made?

A

Carbonic or semi-carbonic maceration.
Some undergo MLC, others do not.
Fining and sterile filtration is common, as is moderate to high use of SO2 (especially if MLC has not taken place, to ensure it doesn’t later happen in bottle).
Bottled 3-5 days after fermentation is finished.

21
Q

Why have some of the crus recently proven an attractive investment? Why has this driven an increase in quality?

A

Due to their high reputations for quality and longevity, coupled with much cheaper land prices than the Côte d’Or Burgundy growers looking to diversify have turned to the region.
Burgundian winemakers have risen quality, encouraged the trend away from carbonic maceration and the increased use of oak, especially in the crus.
