What are essential oils?
They are concentrated aroma extracts found in plants.
What are essential oils used for?
They are widely used in perfumes, cosmetic products, cleaning products an as flavourings.
What are some physical properties of essential oils?
They are usually volatile and insoluble in water.
What family of compounds are found in essential oils?
Terpenes
What are terpenes made up of on a molecular level?
Isoprene units (2-methylbuta-1,3-diene), molecular formula C5H8.
What does the oxidation of terpenes produces?
It produces many compounds responsible for the aroma of spices derived from plants.
e.g. peppermint oil contains menthol and it oxidation product menthone which both contribute to the flavour/aroma.
