what is PX - Pedro Ximénez
sweet sherry made from white Pedro ximenez grapes that have been concentrated by sun drying (the wine is aged in solera) - the resulting wine is almost black/ sweet/ with dried fruits flavour - raisin/ prunes/ pedro ximenez is often used as sweetening components in Cream Sherries
