A
- poached pears in stock of dry white wine, marsala (a dark, sweet, fortified dessert wine that resembles sherry, produced in Sicily) and saffron
- served with whipped mascarpone (Italian cream cheese), meringues flavoured with pomegranate molasses, cubes of warm lemon Genoise cake (Italian sponge cake names after city Genoa) and toasted almonds
- poaching pear liquid has been reduced and used as syrup
- Gluten free if remove lemon cake

Caramelized Honey Panna Cotta

- Classic Italian dessert of sweetened cream thickened with gelatin and molded
- caramelizing the honey to add a little bitterness to the prevailing sweetness
- served with dried apricots and figs that have been poached with spices and citrus and an oat streusel to give it some a crunch element
- not vegetarian due to gelatin
- Gluten free if remove streusel

- Rich, dense flourless chocolate torte, baked in a short crust pastry and served as a slice
- Espresso crumble and whipped mascarpone give dessert a tiramisu feel
