Dukkah - What is it?

A

Traditionally an Egyptian spice blend or condiment. The basic ingredients are nuts, sesame seeds, coriander seeds, cumin, pepper and salt. Dried thyme or mint can be added, dried chilly, anise seeds, fennel seeds etc.

A

3 types:

i) prosciutto, oven dried grape tomatoes, shaved parmesan and salsa verde
ii) gorgonzola, poached pears and red pickled onion
iii) baba ganoush, green olives, capers and dukkah
- can be made dairy free (remove cheeses) and nut free (remove dukkah)

  • meatballs flavoured like North African merguez sausage (spicy coloured by red peppers) and served like Spanish albondigas (Spanish meatball) MEDITERRANEAN FUSION
  • 3 2oz meatball in lightly seasoned tomato sauce with Happy Days farm goat feta and mint gremolata (a dressing or garnish made with chopped parsley, garlic, and grated lemon zest, served as an accompaniment to meat or fish.) to cut through the richness and half a loaf of focaccia
