What do enzymes do?
Enzymes speed up the process of chemical reactions as they are a catalyst

Acidic juices, Air tight containers, Heat, Keeping out of light, Submerging in water

What foods do yeast spoil?
Acidic, Sweet foods. They also release ethanol + C02
What are moulds?
They are tiny fungi which produce thread-like filaments. These filaments help the mould to spread around the food, extracting nutrients.
What are the ideal growth conditions for mould?
-Between 20-30 degrees
-Moisture
-Heat
How can you slow mould growth?
-Putting foods in the freezer
-Keeping humidity levels down
How is mould used in the food industry?
-Cheese e.g. Blue + Brie
-Sausage skins
-Soy sauce
How is yeast used in the food industry?
-Beer
-Bread
-Wine
-Raising agents
How is bacteria used in the food industry?
Starter cultures ( used on cheese and yogurt )
