What is the difference between cross-contamination and cross contact?
Cross-contamination can refer to human, surface or food contamination of another food. Cross-contact is speficially referring to when an allergen comes in contact with a food and contaminates it.
FDA Food Code states that Any cheese cut at retail must be given a maximum of BLANK days shelf life. What is the allowed exception?
7 days, unless the cheese has less than or equal to 50% moisture.
What two elements are of consideration when determining whether or not cheese may be safely displayed out of refrigeration?
Aw and pH.
What are the three Cās in regarding safe storage of š§?
Clean, Cold and Covered.
Ideally, refrigeration is below 40 degrees (34-38).
What is the defect that can occur when displaying in a brightly lit cheese case.
Light Oxidation. Light caused the fat to react and change causing off odor and flavors.
What does Aw stand for? How is it used with regards to cheese?
Water activity. A scientifically accurate way of measuring the degree to which the water in a food is available for pathogen growth. pH and Aw, and the corresponding charts maintained by the FDA can be used to determine whether or not a cheese is safe to display, ship or store outside the cold chain.
What is the difference between a market withdrawl and a recall?
A market withdrawl is initiated by a producer, usually for quality reasons. A recall may be initiated by the producer or mandated by the FDA. This is a more serious situation in which a food code has been violated or there is a serious health threat. Class I being the most serious and potentially life-threatening.
