What is a raclette machine and how is it used?
A machine or other device, electrical or coal for heat source, that provides an even source of low heat to melt raclette for scraping and serving.
What is a cheese trier or cheese iron?
It is a device that is plunged into a wheel of cheese to extract a sample plug of the interior, in order to evaluate its readiness for market. The person grading the cheese would examine aroma, texture and appearance.

Scoring knife, stiletto, wedge…

Hand wire, platform wire.
What kind of knife might one use to cut a large semi-firm or hard cheese that has been tempered at room temp for a short time?
