Describe an Ayreshire bovine. What Oregon cheese is made from it?
This red and white cow is originally from the County of Arye in Scotland.
Dunlop Ayrshire cheese, developed in the 1700s in Scotland is a soft, cheddar style.
Also Maia, a soft, natural-rinded cheese is made in Oregon. The largest numbers of registered Ayrshire cattle are found in the New England states, including New York, Pennsylvania and Vermont.

Describe the unique aspects of Holsteins dairy cows.
These black and white cows are know for high volume milk production. The milk they produce is combination A1/A2 protein types. Their milk has lower milk fat than other cow breeds. This breed originated in the Netherlands some 2,000 years ago. For this breed, it’s all about milk production.
Describe a Jersey cow and can you name a cheese product made from Jersey milk?
Medium-sized, fawn-colored brown cows. Jersey cattle are very efficient grazing animals and can thrive is many different climates and geography types around the globe. Over time, milk from this breed is higher in butterfat and protein than higher volume producing breeds. Jersey’s are A2 protein milk producers. There are approximately 1.0 million Jersey’s in the US today. (Culture Magazine, “Farm Animal: Jersey Cows”, Nov. 23, 2015) Bellweather Farms uses only Jersey milk to produce it’s award-winning ricotta and crème fraiche.

This bovine is famous for the “golden” color of their milk, which happens because they have a high concentration of butterfat and protein. It’s also because of a high concentration of beta-carotene, the pigment that gives carrots their orange color; the body converts this substance to Vitamin A. Guernsey cattle have fawn and white hide markings. Guernsey’s produce 80% A2 milk.
Wisconsin cheese producer, Carr Valley, makes their Bread Cheese line from Guernsey milk. They also make a Guernsey Cheddar.
French cheese Port Salut is also 100% Guernsey, a mild washed rind style cheese.

These silver to light brown-colored cows, and one of the largest dairy breeds, was imported in the 1800s from Switzerland. Wisconsin, Ohio and Iowa presently boast the largest Brown Swiss populations in the U.S., but they can be found all over the country. The Cheese called Ski Queen, a gjetost.
