is the process of supplementing food or drink products, usually with vitamins or minerals.
Why are foods fortified?
Restoration of lost nutrients
Substitution of nutrients for similar products
To enrich staple foods with nutrients
To add nutrients to foods for marketing purposes
Effects of fortification
The potential effects of fortification must be considered to ensure high consumption of food products do not mask any nutritional deficiencies.
What are food additives?
are substances added to foods to perform a particular function, such as enhancing the colour, appearance, flavour or texture, improving the nutritional composition, or extending the shelf life through preservation of the product.
There are three main groups of additives:
Artificial additives
Natural additives
Nature identical additives
Types of food additives
Antioxidant-Prevents foods from oxidising, or going rancid, keeping it for longer.
Bulking agent-Increases the bulk of a food without affecting its nutritional value.
colourings - Added to food to replace colours lost during processing or to add colour to a food to make it more appealing.
Reasons for the use of food additives
Food additives keep food safe by lengthening the shelf life.
Food additives can make foods more appealing by enhancing the flavour, colour or texture.
Food additives can enrich foods and improve or maintain nutritional value
Reasons against the use of food additives
Food additives have been linked with adverse health effects such as cancer and allergic reactions.
Food additives have been linked with affecting some children’s behaviour and health.
Food additives can make food products appear ‘better’ than they are.
