Smells of the sea, no damage, clear bright eyes, deep red gills, natural slime, firm flesh
Classifications of fish
Round, white : code haddock hake bream bass
Round oil : salmon, mackerel, sardine, trout
Flat white: plaice, sole, brill, turbot

110g oily and 150-200 white
What is a dextral fish?
Flat fish with eyes on right side of body - plaice

Briefly outline pre of squid (6)
1.Remove legs and their legs from body- locate eyes and remove along with innards
2. Squeeze out the beak (mouth)
3. Trim tentacles
4. Remove quill
5. Remove membrane
6. Cut body along the quill line, clean dry and score
Outline prep of an octopus
- Locate eyes cut just below and discard the head
- remove beak
- separate the legs
Best way to tenderise an octopus
Freeze and defrost then Blanche and refresh
