Fats/Lipids Flashcards
The lipid family
Triglyceride (head)
Phospholipids (structural)
Sterols - eg.cholesterol
Structure of a triglyceride
Carbs have C,H,O Proteins have N as well.
Fats have 3 fatty acid chains consisting of C and H
Glycerol backbone
Difference between fats and oils
Fats solid at room temp
Oils liquid at room temp
Fats generally saturated
Oils generally unsaturated
Fats more in animal
Oils more in plants
The 3 fatty acids
Saturated: H on both sides no double bonds
Unsaturated: one or more double bond between carbons
Polyunsaturated: multiple double bonds BETWEEN CARBONS
ESSENTIAL
MONO=1
monosaturated
Risks of saturated fat
Increase risk of cardiovascular disease
Polyunsaturated fats however deacrease risk and lower cholesterol and are essential
What are trans fat
Hydrogenated fats generally found in bakery foods Clogs arteries Blood clots Heart attack Stroke
HDL and LDL
HDL H = healthy
LDL = bad for health
(Two components of cholesterol)
Functions of Lipids in the body
Absorption of fat soluble vitamins
Contribute to cellular structure
Provision of energy
Provide insulation and protect vital organs
Fat soluble vitamins
A D E & K
Amino acids are polymer or monomer
MONOMER
THEY GO TOGETHER TO MAKE A POLYMER/POLYPEPTIDE CHAIN
How many kJ/g do fats provide
37.7kj/g
