- weigh food product
- use the same mass of water/ volume
- measure temp of the water
- light food product on fire
- heat water with food product
- burn food product until it is completely burnt
- measure the change in water temperature
- energy content = 4.2 x mass of water x temp change / mass of food product
- repeat to make reliable
