What are enzyme
Are proteins that contain an area with an active site which the chemical reaction take place
Enzyme are specific
Enzyme are specific to the substrate
The specific substrate Fits into the specific active site which is complementary

The active site of an enzyme is a specific shape and only catalyze one reaction

Once the substrate has entered it
Temperature
Increasing the temperature speeds up the reaction. And lowering the temperature slows down a reaction. However extreme high temperature can cause an enzyme to lose it shape and stop working
pH
Each enzyme has an optimum pH range. Changing the pH outside of this range will slow enzyme activity. Extreme pH values can cause enzyme to denature
Amylase
Break down starches & carbohydrates into sugar
Produced in the mouth and pancreas
Secreted in the mouth and duodenum (small intestine)
Protease
Break down proteins into amino acid in the stomach and small intestine
Produced by the pancreas
Lipase
Break down lipids into glycerol and fatty acids
