how tiny are emulsions

A

particles of the internal phase need to be less than 25um. If .1 or less however the particles will be so small that they will be produce a surface area so large that there will not be enough emulsifiers to bind to the particles. In addition the particles would be too small for emulsifiers to bind to and such emuslfiers would as a result bind to themselves creating a competing bilayer phase. If too big the surface area would be too small
