What are the two types of emulsions?
A
Water droplets in oil or Oil droplets in water.

What are the two main structures a emulsifier must contain?
A
A hydrophobic part (non-polar section)
A hydrophylic part (polar section)

How does it work?
A
The hydrophylic head dissolves in the water and the hydrophobic tail dissolves in the oil. The water and oil then are unable to seperate, forming an emulsion.

How are they made?
A
By reacting edible oils with glycerol.
