How do anti-oxidants work?
What are they also known as?
A
They are reducing agents and deactivate free radicals formed during oxidation by becoming oxidised themselves and donating electrons, which stops the formation of more free radicals.
AKA - free radical scavengers.
EASILY OXIDISED.

A
The initiation step or the progation step.
