What are the benefits of emulsifiers in foods?
Stop oil separating into layers , makes food smoother, creamier and more palatable

High in energy , contain important nutrients , contain unsaturated fats which are better for your health

Higher in fats
What are the drawbacks of using vegetable oils in foods ?
Animal fats and hydrogenated vegetable oils contain saturated fats (linked to heart disease)
What are emulsifiers ?
Substances that help stop the oil and water from separating into layers
What is a emulsion ?
A type of mixture containing oil and water with tiny droplets form that can be slow to separate
Name properties of Hydrogenated oils?
Higher melting points because they are more saturated , solids at room temperature meaning they can be used as spreads to make pastries and cakes that require solid fats
What is hydrogenation?
Unsaturated oils can be reacted with hydrogen so that the double bonds become single bonds (done using a 60 degrees nickel catalyst)
What is the hydrophilic ?
Found on a emulsifier molecule , attached to water
