What does an emulsifier do?
Make oil and water mix without separating
Name the 4 different types of food additive and their jobs
Food colour - appealing
Flavour enhancer - bring out taste and smell
Antioxidants - preserve
Emulsifiers - blend oil and water
What do you call a mix of oil and water?
Emulsion
What is an emulsion made up of?
Droplets of one liquid SUSPENDED in another
Why do we need emulsifiers?
Oil and water naturally SEPARATE, emulsifiers stop this
Give 3 examples of food that need emulsifiers
Ice cream
Mayonnaise
Low fat spread
What are emulsifiers made up of?
Molecules with one part attracted to water (Hydrophilic), one part attracted to oil (HydroPHOBIC)
What happens when you shake oil, water and emulsifier?
Oil forms droplets, surrounded by coating of emulsifier with hydrophilic bit facing outwards.
Other oil droplets are repelled and water molecules latch on.
Emulsion won’t separate out.
