Passito Riserva must exhibit “muffa noble” (noble rot)
Grapes for Passito and Passito Riserva may be dried until March 30 of the year following the harvest, and may not be vinified prior to October 15 of the harvest year
Aging Requirements:
Passito: May not be sold until September 1 of the year following the harvest
Passito Riserva: May not be sold until December 1 of the year following the harvest
