removes the moisture from food
how can drying (dehydration) be done?
can be done, using air, heat or dehydrator

reduces the water content, preventing microbial growth and spoilage
what is salting?
applying slat to food to draw out moisture
what does salt act as?
salt acts as a preservative by dehydrating the food and inhibiting bacterial growth
what is pickling?
when food is submerged in a solution of vinegar, brine or alcohol. which helps preserve it by creating acidity
what does the acidity of pickling prevent?
prevents bacteria from growing and helps the food stay fresh for longer
