Maple Cranberry Tart
has gluten, has pecans, has gelatin
• Maple mousse – maple is flavored with star anise and orange peel
• Cranberry compote – cranberry is cooked down with orange, then spread thin, frozen, cut into shapes, and placed inside maple mousse. When you cut into the maple mousse the cranberry compote should ooze out of the middle
• Pecan crust – crust made out of cooked meringue and pecan flour. Will sandwich the maple mousse.
• Cranberry foam – cranberry puree mixed with versawhip, piped, then frozen
• Cranberry maple sauce
• Pecan sandy crumble
• Pecan maple meringue cookies
• Micro mint
• Frozen sable – pecan cookie that has been baked, pureed with grapeseed oil, then frozen to form frozen cookies
• Cranberry orange sorbet
Nemesis Cake
gluten free, has almonds, has gelatin (can be removed if caviar is taken off)
• Nemesis Cake – flourless chocolate cake made with 65% huila chocolate, which is a single origin south Colombian chocolate, butter, eggs, brown sugar, and coffee
• Chocolate almond biscuit – made with white chocolate, green tea powder, and almond meal, is a thin biscuit under the nemesis cake
• Black sesame sauce – black sesame seeds are toasted and pureed with a thicken simple syrup
• Candied cocoa nibs – a 50/50 mix of cocoa nib and black sesame seeds that are mixed with a dark caramel. After cooling they are ground into a powder
• Green tea ice cream
• Pomegranate caviar – pom juice seeped with fresh ginger, mixed with gelatin, and dropped into cold oil to form spheres
• Poached pears – pears that are slowly cooked in a lemon ginger simple syrup. Half of the pears are left whole to be sliced and put on the plate and have are pureed into a sauce
• Chocolate mousse – a 55% chocolate mousse that has been made then dehydrated overnight to achieve a crispy texture
• Black sesame tuile - a sugar mixture is cooked to a high temp, spread on a sheet pan, sprinkle with black sesame seeds, baked, then while still warm pulled so it’s very thin and brittle
Pumpkin Custard
has gluten
• Pumpkin custard – baked pumpkin custard, texture is similar to a crème brulee
• Sweet potato cake – brown sugar sweet potato cake
• Brown butter ganache – brown butter is infused in cream overnight then mixed with a 50% chocolate
• Brown butter powder – sweetened brown butter mixed with tapioca maltodextrin
• Cinnamon Chantilly – cinnamon whipped cream
• Pumpkin lace tuile
• Sweet potato sauce
• Pumpkin/sweet potato beignet – pate a choux is mixed with a pumpkin/sweet potato puree, chill, then rolled in panko and fried
White Chocolate Box
does not have nuts, does not have gluten, has gelatin
• Box has layers of roasted grape, pink champagne gelee, white chocolate yogurt mousse, and carbo white chocolate. Carbo white chocolate has been put in an iSi charger, charger with CO2, then expel to form airy, chocolate ‘rocks’. Sprayed in a white chocolate spray
• Roasted grape jus on plate
• Box is garnished with silver leaf, plum sorbet, champagne foam, and white chocolate tuile
Caramel Apple Trifle
