2¾ oz gimlet batch

Stir over ice until it reaches 25ºF. Strain into a chilled coupe.

Notes: The original gimlet was gin and Rose’s Lime Cordial, a sulfur-preserved lime syrup patented byLauchlan Rose in 1867. Currently the product is owned by Schweppes and contains food coloring and high-fructose cane syrup. When ordering a Gimlet at most good-quality bars, you will typically be made a gin daiquiri, as high-quality lime cordial is not commercially available. Here we use the ingredients of lime cordial: lime juice, zest and sugar to make a traditional gimlet in a decidedly untraditional method.

Notes: A Daisy is a classic cocktail family comprised of spirit, citrus, and a flavored sweetener. While the Tommy’s Margarita is a delicious drink, it is actually a tequila daiquiri, not a Margarita, which is the Spanish word for Daisy. Agave is an unflavored sweetener; the Margarita demands orange liqueur.
