What is dashi?
The classical Japanese broth made from bonito flakes and kelp.
What is Sake?
A Japenese alcoholic beverage made from fermented rice.
What does “Tempura” mean?
It is a batter made with flour and club soda together, used for coating to deep-fry foods.
What is miso?
A fermented soybean paste.
What is kimchee?
A spicy, slightly fermented pickle-like vegetable dish that accompanies every Korean meal. Made from cabbage, radish, cucmbers, garlic, ginger, salt and other seasonings.
What is “Wu Chai Pi Chew” ?
A sweet Chinese rice wine.
What is Bonito?
A very flavorful dried fish flake used to season broths.
What is “Dim Sum”?
Little purses, or little open dumplings, that have been steamed, boiled or fried.
What is an Udon Noodle?
A thick White Noodle that is made from wheat flour.
What is bokchoy?
A leafy green. It is a Chinese chard that is tender and delicat with smooth white stems and large green leaves.
What is wasabi?
A pungent green plant similar to horseradish
What is daikon?
A long, white thick Japanese radish.
What is a tamarind?
A sweet and sour fruit made from the pods of a tamarind tree.
What is wakame?
A type of seaweed that is bright green in color and has a delicate flavor.
What is nori?
Small, wafer-thin strips of dried seaweed with an intense fish flavor.
What is xo sauce?
A Chinese chili sauce made from dried seafood and Smithfield ham.
What is togarashi?
A blend of peppery spices: sesame, poppy, hemp seed, red pepper flakes, nori, sansho pods and dried citrus peel.
What is mirin?
A Japanese alcohol made from rice - sweeter than saké and used primarily for cooking.
What does Negamaki mean?
Scallion Roll in Japanese.

Tiny white mushrooms
What is ponzu?
A Japanese sauce primarily consisting of citrus, soy and vinegar.
What is hamachi?
This is Japanese for yellowtail tuna. It is a white-fleshed tuna.
