Crème Anglaise method?
1) Steam the milk.
2) Blanch egg yolk, vanilla bean paste & sugar together.
3) Temper the egg yolk mixture with the steamed milk, by pouring 1/3 milk mixture in continuously whisk together.
4) Place everything back into the saucepan & cook the mixture on low heat until the sauce thickens. (Don’t not boil the mixture).
5) Add thickened mixture to a round bowl & cool over ice bath. This prevents the sauce from continuing to cook & then curdling/splitting.
How do you store crème anglaise & for how long?
Crème anglaise can be refrigerated in an airtight container for up to 5 days.
What is crème anglaise used for?
Crème anglaise can be poured over cakes or fruits as a sauce or eaten as part of desserts such as floating island. It also serves as a base ingredient for other desserts such as ice cream or crème brûlée.
What temperature should crème anglaise be cooked to?
82 °C to 83 °C
