Country Spiced Maple Syrup- 2:1 syrup to water
In a saucepan, combine 24oz maple syrup with 12 oz water. Add 2 vanilla beans split lengthwise, ¼ cup cracked black peppercorns, peel from 1 orange, 1/8 cup dried fennel seed, 1 cinnamon stick, ¼ cup pecans. Bring to a simmer and steep for 10 minutes. Allow to cool slightly and fine strain through a chinois.
Matcha Tea and Wasabi Honeydew Syrup-
Steep 6 matcha tea bags or 1/8 cup loose leaf tea in 12 oz hot water for 5 minutes. Do not steep longer than 5 minutes. Add equal weight white sugar and stir until dissolved. Peel and de-seed honeydew and chop into 1-2” pieces. Blend in vitamix and fine strain. Combine tea syrup with honeydew juice and add 1 tablespoon wasabi.
Ginger Syrup
Chop ginger into into 1” pieces. Weigh and add equal parts warm water. Blend in vitamix 2-3 minutes or until ginger is finely pureed. Fine strain through chinois. Weigh with equal parts sugar and return to vitamix to blend until dissolved.
Ginger/Apple Cider
Use recipe for ginger syrup, substituting apple cider for water. Once strained, combine with sugar in a 2:1 juice to sugar ratio.
Turmeric Honey
Per 24 oz honey, use 1/8 pound fresh turmeric root. In a saucepan, combine honey and water in a 2:1 ratio, honey to water. Course chop turmeric root, being careful to use gloves, as turmeric stains EVERYTHING. Add turmeric to saucepan and simmer on low for 5-10 minutes. Remove and fine strain.
Cinnamon/Kaffir Lime Syrup
In vacuum seal bags, fill with simple syrup. Add 10-15 Kaffir lime leaves and 5 cinnamon sticks. Seal, and sous vide cook for 90 minutes at 130 degrees. Cool and fine strain.
Lemon Cordial
Combine water with sugar in a 2:1 ratio. Place in saucepan along with the peel from 1 lemon and 1 lime finely chopped. Simmer for 5-10 minutes and make sure sugar is dissolved. Combine sugar water and fresh lemon juice in equal parts. Per 20 oz of cordial add 1 tsp citric acid and mix until dissolved.
Brown Sugar Chai
Per 1 L hot water, at 8 chai tea bags. Steep for no longer than 6 minutes. Remove tea bags. Add equal weight brown sugar. Stir until dissolved.
Watermelon Shrub
Per 1 large watermelon. Chop watermelon into 1-2” cubes. In large cambro, combine watermelon and 3 full cups sugar. Mix until well distributed. Allow to sit overnight or for 8 hours. Add 1 cup light vinegar such as champagne vinegar. Place mixture in vitamix and blend. Fine strain through chinois. Add 1 cup aquavit.
Pineapple Jam
Per 1 large ripe pineapple. Core and clean pineapple. Chop into 1-2” pieces. In a saucepan, combine pineapple with 2 cups sugar and 1 cup water. Cook on low heat for 15-20 minutes. For drier pineapples, add extra water in ½ cup increments. Once pineapple begins to look more like a “jam” and liquid is mostly dissolved, allow to cool. Blend in vitamix for 3-4 minutes with 3 tbsp cayenne and 1 tbsp chipotle chile powder until well blended. Strain in course strainer.
