Pour coffee liqueur and vodka into ice filled old fashioned glass and fill with milk or cream
Hurricane
30 mls White Rum
30 mls Dark rum
10 mls Lime Juice
15 mls Passionfruit syrup
Shake with ice and strain into a cocktail glass
Kir Royal
175 mls Champagne
1 splash creme de cassis
In a flute, pour the cassis first, then the champagne. Serve chilled.
Long Island Iced Tea
20 mls Tequila 20 mls Vodka 20 mls Triple Sec 20 mls Gin 20 mls Light Rum 30 mls Sour Mix Cola
Combine the ingredients over ice in a highball glass. Add the cola for color. Garnish with a slice of lemon.
Manhattan
15 mls Sweet Vermouth
60 mls Rye Whiskey
1 dash Angostura Bitters
Stir with ice and strain into a cocktail glass. Garnish with a cherry.
Margarita
45 mls Tequila
15 mls Triple Sec
30 mls Lemon Juice
Salt
Shake with ice, strain into the salt- rimmed, glass and serve.
Martini (Dry)
50 mls Gin
10 mls Vermouth
Stir with ice and strain into a chilled martini glass. Garnish with a twist of lemon peel or olive.
Mimosa
120 mls Champagne
30 mls Orange Juice
Pour orange juice into a champagne flute. Slowly add champagne. Garnish with an orange wheel. Change the ratio of orange to champ according to taste.
Negroni
20 mls Sweet Vermouth
20 mls Gin
20 mls Campari
Shake with ice and strain into a chilled glass. Garnish with an orange twist.
Mint Julep
75 mls Bourbon Whiskey
10 mls Water
5 mls Powdered Sugar
4 sprigs Mint
Muddle mint leaves, powdered sugar, and water in a julep cup or rocks glass. Fill glass with crushed ice and add bourbon. Top with more crushed ice and garnish with a mint sprig. Serve with a straw.

Pina Colada
60 mls Light Rum
30 mls Dark Rum
60 mls Coconut Cream
90 mls Pineapple Juice
Combine all ingred. With ice in a blender on high speed. Blend until smooth and pour into a Hurricane or Parfait glass. Garnish with a pineapple spear.
Screwdriver
45 mls Vodka
150 mls Orange Juice
Build in ice filled highball glass and stir
Americano
1 measure of Campari
1 measure Sweet Vermouth
Soda Water
An Americano is prepared by building equal quantities of Campari, and Sweet Vermouth in a highball, ice, and too off with soda water. Add a half slice of orange, a thin wedge of orange or a twist of lemon zest and serve.
Black Velvet
Equal quantities of champagne and Guinness are built into a beer or high- ball glass.
Buck’s Fizz
1/3 fresh orange juice
2/3 Champagne
Mimosa
Same as a Buck’s Fizz with a dash of Orange Curacao
Kir Royale
2 dashes of Creme de Cassis in Champ glass topped with Champs
Champagne Cocktail
1 glass of Dry Champagne
1 Teaspoon Cognac
1 cube of sugar
Angostura Bitters
Place a cube of sugar in champ glass. Saturate with bitters. Add cold champs top with one teaspoon of cognac. Finish with hand slice of orange. Can be decorated with a maraschino cherry and a slice of orange on a cocktail stick, resting on the top of the glass. Can substitute grand mariner instead of cognac for drink version.
Brandy Alexander
1/3 Brandy
1/2 Brown Creme de Cacao
1/3 Cream
Shake and strain, serve in a cocktail glass, with grated nutmeg on the top
Cosmopolitan
1 measure of Vodka
1 measure of Cranberry Juice
1/2 measure of Cointreau/ Triple Sec
Juice of half a fresh lime
Build the ingredients into a high ball glass half filled with ice, serve with a straw
Cuba Libre
1 measure white rum
Juice of half a fresh lime
Cola
This drink is classed as a highball. It is made by adding the rum and lime juice to a highball glass half- filled with ice and topping up with cola. Stir with a bar spoon and decorate with a thick slice of fresh lime. Serve with straws.
Daiquiri
3/4 white rum
1/4 fresh lime juice
3 dashes gomme syrup

1/3 Creme de Menthe

Shake and strain into a cocktail glass
Harvey Wallbanger
1 Large measure (50 mls) Vodka
1 baby size bottle of OJ
1/2 Measure Galliano
This popular mixed drink is prepared by combining a large measure of vodka with a bottle of OJ in a highball glass half filled with ice. Half a measure of Galliano is poured on the top, and the drink is served by straws.
Highballs
Highballs are long drinks comprising a spirit and an effervescent mixer, and sometimes a third ingredient. They are all served in highball glasses.
Horse’s Neck
1 Measure of Brandy
Ginger Ale
Peel of one Lemon
Peel the skin off a lemon in one lone spiral , place one end in the bottom of a highball glass and the other over the top edge. Place into the glass, add the brandy and top up with ginger ale.
Rye Highball
1 Measure Rye Whisky
Ginger Ale or Soda Water
A measure of rye whiskey is placed in a highball glass half filled with ice and topped up with ginger ale or soda water, stirring with a bar spoon. A twist of lemon may be added. A rye and dry in the UK is rye whiskey, ice and ginger ale.
John or Tom Collins
1 Measure of London Dry Gin
Juice of 1 Medium- Sized Lemon
1 Teaspoon/ Bar spoon Gomme syrup
Soda Water
Half fill a highball glass with ice. Add the gin, lemon juice and gomme, then top up with soda water, stirring with a bar spoon, decorate with a slice of lemon and serve with straw.
Mir
Kir is a mixture of 12 mls of Creme de Cassis topped up with dry white wine and served in a wine glass.
Long Island Iced Tea
1 part Vodka 1 part Tequila 1 Part White Rum 1 Part Gin 1 Part Cointreau or Orange Liqueur 1 Part Lemon Juice Splash Coke
Shake, Strain into highball glass, add the splash of Coke and garnish with lemon wedge.
Mai Tai
1 Measure White Rum 1 Measure Golden Rum 1/2 Measure Curacao 1/2 Measure Orgeat Juice of a lime
Build the ingredients into a highball or old- fashioned glass filled with ice. Decorate with a slice of fresh lime. Slice of pineapple, a cherry and sprig of mint. Serve with a straw.
Manhattan
There are three types of Manhattan’s: Sweet, Medium and Dry. They are all mixtures of rye or bourbon whiskey and vermouth
Sweet Manhattan
1 1/2 Measures Rye Whisky
3/4 Measure Sweet Vermouth
1 Dash Angostura Bitters
Stir and strain into a small cocktail glass and add a Maraschino Cherry. A Rob Roy Cocktail is a sweet Manhattan with Scotch Whisky in place of Rye Whiskey.
Medium or Perfect Manahattan
1 1/2 Measures Rye Whiskey
1/2 Measures Sweet Vermouth
1/2 Measure Dry Vermouth
Stir and Strain into a small cocktail glass, add a cherry and twist of lemon
Dry Manhattan
2 Measures Rye Whiskey
1/2 Measure Dry Vermouth
Stir and Strain into a small cocktail glass and finish with a twist of lemon.
Martini Cocktails
There are three types of Martini cocktails. Sweet, Medium and Dry. The actual proportions vary from bar to bar but the recipes below are a guide. Martinis are now made with many other spirits and bases for example, vodka martini, tequila martini and Sake martini.
Sweet Martini
2 Measures Gin
1 Measure Sweet Vermouth
Stir and Strain into a small cocktail glass and finish with a maraschino cherry.
Medium or Perfect Martini
2 Measures Gin
1/2 Measure Sweet Vermouth
1/2 Measure Dry Vermouth
Stir and Strain into a small cocktail glass and finish with a twist of lemon
Dry Martini
2 Measures Gin
1/2 Measure Dry Vermouth (this will vary considerably with taste)
Stir and strain into a small cocktail glass and finish with a twist of lemon or green olive.
A dryer version of the dry martini is sometimes referred to as an American dry martini. This is mixed in the ratio of two measures of gin with two splashes of dry vermouth. It has become the fashion to drink martinis very dry. If this is served with a pearl onion instead of the twist of lemon zest, it is called a Gibson.
Pimm’s
There are now only two types of Pimm’s No 1 which is a gin based, and Pimm’s No. 6 which is vodka- based
Pimm’s No 1 cup, which is Gin based
Half fill a highball glass with ice, pour on one measure (50 mls) of Pimm’s top up with lemonade and stir.
Decorate with a slice of cucumber peel in the glass, and a cocktail stick with a slice of lemon, slice of orange, slice of apple, and a cocktail cherry across the top of the glass.
Vodka, Pimm’s is made in the same way using Pimm’s No 6 cup, which is vodka- based.
Pink Gin
50 mls Plymouth Gin
Angostura Bitter
Iced Water
The original Pink Gin was made with Plymouth Gin, and this still recognised as the correct ingredient. Angostura Bitters are shaken into a spirit glass. The glass is twisted around to allow the bitters to coat the inside of the glass. Any excess bitters may be emptied out. The gin is added and the drink is served topped with iced water.
Pink Lady
50 mls Dry Gin
1/2 Measure Grenadine
1 Egg White
All the ingredients are shaken and strained into a small cocktail glass.
Pousse- Cafe
These drinks are made by layering syrup liqueurs and spirits on top of each other in q narrow glass. The order in which the liqueurs are added depends on the specific gravity of each ingredients syrups are the heaviest Liquors are the next and spirits are the heaviest. The bottles of ingredients should be lined up in order. A small quantity of each is poured down the inside edge of the glass onto the bowl of a small spoon, usually a coffee spoon or teaspoon, which is held against the inside of the glass and the opposite too inside edge. Some people prefer to drink this through a short straw. Shake and strain into a large cocktail glass and decorate with a half slice of lemon.
Rusty Nail
2 Parts Scotch Whisky
1 Part Drambuie
Build into an old- fashioned glass (with or without ice). Serve with a twist of lemon.
Screwdriver
50 mls Vodka
1 Baby Size OJ
Build into a highball glass half- filled with ice and stir with a bar spoon
Sidecar
2 Part Brandy
1 Part Cointreau
1 Part Fresh Lemon Juice
Shake and Strain into a cocktail glass
Sours
Sours are shaken cocktails of fresh fruit, juice, a spirit and a sweetening (either a syrup or a liqueur). The drink is usually enhanced by incorporation of a little egg white.
Whisky Sour
50 mls Scotch whiskey
Juice 1/2 Lemon
1/2 gomme Syrup
1/2 White of Egg (optional)
Tequila Sunrise
50 mls Tequila
1 Baby Size Bottle Orange Juice
The tequila is combined with the OJ in highball glass half- filled with ice.
A little grenadine is poured down the inside of the glass.
Decorate with a half- slice of lime or orange and a maraschino cherry, and serve with straws.
White Lady
2 Parts London Dry Gin
1 Part Cointreau
1 Part Fresh Lemon Juice
Shake and Strain into a cocktail glass
Non- Alcoholic Cocktails
There are numerous recipes for non- alcoholic mixed- drinks and cocktails. They can be made by using combinations of fruit juices, syrups, non- alcoholic cordials, milk, cream and eggs. These may be topped up with soda water, lemonade or other non- alcoholic mixers.
Saint Clements
1 Part Orange Juice
1 Part Bitter Lemon
Stir in ice, strain and serve in a highball glass.
Shirley Temple
Pour a ginger ale into an ice- filled highball glass. Add some drops of grenadine and stir and serve
Pussyfoot Cocktail
1 Egg Yolk
1 part fresh orange juice
1 part lime juice
Dash of grenadine
Shake and strain into a wine glass.
A mixture of fresh orange juice and lemonade is a very popular drink with athletes
Aviation cocktail
60 mls gin
15 mls Maraschino Liqueur
7 mls Lemon Juice
Shake with ice. Strain into cocktail glass.
Americano
60 mls Campari
60 mls Bianco Vermouth
Club Soda
Highball on the rocks. Fill with club soda and stir. Garnish: Slice of orange.
Bobby Burns Cocktail
45 mls Sweet Vermouth
45 mls Scotch
6 mls Benedictine
Stir with ice, strain into a cocktail glass. Garnish with a twist of a lemon peel
Tom Collins
60 mls Gin
30 mls Lemon Juice
Club Soda
5 mls Superfine sugar
Shake lemon juice, sugar and gin with ice. Strain into a Collins glass almost filled with ice. Add soda. Stir and garnish with a cherry and an orange slice.
Sloe Gin Cocktail
60 mls Sloe Gin
7 mls Dry Vermouth
1 Dash Orange Bitters
Stir with ice, strain into a cocktail glass, and serve.
Singapore Sling
45 mls Gin 15 mls Cherry Brandy 7 mls Benedictine 7 mls Triple Sec 120 mls Pineapple Juice 15 mls Lime Juice 10 mls Grenadine 1 Dash of Bitters
Shake with ice and strain into an ice filled Collins glass. Garnish with a fresh or maraschino cherry and slice of pineapple.
Gimlet
45 mls Gin
30 mls Lime Juice
5 mls Powdered Sugar
Shake with ice and straw into a cocktail glass
Gibson
120 mls Gin
1/2 Dry Vermouth
Stir well with ice cubes and strain into a chilled cocktail glass. Garnish with cocktail onions.
Champagne Cocktail
Champagne
2 Dashes Bitters
1 Sugar Cube
Place sugar cube and bitters in a chilled champagne flute. Fill with champs. Garnish with a twist of a lemon peel and serve.
Caipirinha
75 mls Cachaca
1 Lime
10 mls Granulated Sugar
Muddle the usage into the lime wedges in an old fashioned glass. Pour the Cachaca (Brazillian White Rum) into the glass. Stir well.
Bronx Cocktail
15 mls Sweet Vermouth
30 mls Gin
15 mls Dry Vermouth
30 mls Orange Juice
Shake with ice and strain into a cocktail glass. Garnish with an orange slice.

60 mls Light Rum Soda Water 10 mls Sugar 1 Lime 4 Mint Leaves
Middle sugar and mint in beer mug. Squeeze both halves of lime into the glass, leaving one hull in mix. Add rum, stir and fill with ice. Top with club soda. Garnish with a mint sprig.
Pimm’s Cup
60 mls Pimm’s No 1
90 mls Ginger Ale
Pour Pimm’s into an ice filled Collins Glass. Top with chilled ginger ale. Garnish with cucumber slices or a slice of lemon.
Old Fashioned
60 mls Blended Scotch
5 mls Water
1 Dash Bitters
1 Sugar Cube
Combine the sugar cube, bitters and 1 tsp water in an old fashioned glass. Muddle well, add scotch, stir. Garnish with a twist of lemon peel, slice of orange and a cherry. Serve with a swizzle stick.
