Most metals produce hydrogen when reacting with dilute acids, which don’t and why?

Copper, Silver, Gold and Platinum don’t produce hydrogen when reacting with acids because they are even less reactive than hydrogen itself. They don’t react with anything pure. Therefore the more reactive the metal is in the acid, the more hydrogen is produced.
