Chapter 4: Fiber, Types of Fiber Flashcards
Cellulose
Dietary Fiber, B1-4 bonds, insoluble, non-fermented. Found in whole grains, legumes, root v, nuts, cabbage.
Hemicellulose
Dietary Fiber, B1-4, B1-3, insoluble, fermentable, side chains create fermentability and sugar position. Backbone arabinose, glucoronic acid, galactoside. Found in whole grains, nuts, legumes, and some fruits and v
Pectins
Dietary and Functional Fiber. soluble, fermentable, gel forming, galacturonic acid as backbone. Found in apples, berries, apricots, cherries, grapes, and citrus.
Lignin
Dietary Fiber, insoluble, fermentable, aromatic. Found in wheat rye, root vegetables, flax
Gums
dietary and functional fiber, B1-4 and B1-6, fermentable, water soluble and water binding. found in oatmeal, barley and legumes
B Glucans
Dietary and Functional Fiber, soluble, fermentable. Found in oats, barley, and mushrooms.
Frunctans
Dietary and Functional fiber, B2-1 soluble, fermentable, found in chicory, asparagus, leeks, onions, artichokes, tomatoes, bananas, cereal, dairy.
Resistant Starch
a1-4, partially fermentable, RS1 and RS2 are dietary, and Rs3 and RS4 are functional. found in green bananas, potatoes, legumes, maize, potatoes, rice, pasta, bread, corn
Mucilages
dietary, fairly soluble, found in seeds and flax, reduce LDL
Polydextrose/Polyols
dietary, fermentable, does not raise BG like other CHO, and is found in apples, watermellon, plums, peaches, pears
Resistant Dextrins
dietary, soluble, fermentable, found in cornstarch and wheat starch. Usually made by heating or enzymatic treatment
Chitin/Chitosan
functional, insoluble, found in exoskeleton of crabs, shrimp, and lobster.
