Chapter 3.5 Factors affecting enzyme action Flashcards
What is enzyme activity affected by?
Enzyme activity is affected by temperature and pH.
What does high temperature do to the the enzyme?
High temperatures denature the enzyme, changing the shape of the active site.
What effect does pH have on enzyme activity?
Enzymes are affected by changes in pH. The most favourable pH value - the point where the enzyme is most active - is known as the optimum pH. Extremely high or low pH values generally result in complete loss of activity for most enzymes.
What is the effect of temperature on enzyme activity?
Temperature Effects. Like most chemical reactions, the rate of an enzyme catalysed reaction increases as the temperature is raised. A ten degree Centigrade rise in temperature will increase the activity of most enzymes by 50 to 100%.
