Chapter 2- Proteins, Fats, Carbohydrates Flashcards
What atoms do proteins consist of?
Carbon, nitrogen,oxygen and hydrogen
What are proteins macro molecules made up of?
Amino acids
How many amino acids are there in a protein?
50 (20 essential)
What does the sequences of the amino acids determine? What is the function of that?
Cross-linkage bonds. They hold the polypeptide chain together, which will determine the shape and function of the protein
What are the two main protein shapes?
Fibrous and globular
What will the affects be if a protein has been exposed to high temperatures and unfavorable pH?
Cross linkage bonds break; loss in shape and ability to function. (Denatured)
What protein is found in,
Muscles?
Connective tissue?
Egg white?
Actin and Myosin
Collagen
Albumin
What are fats and carbohydrates made up of?
Carbon, hydrogen and oxygen
List 7 functions of fats
Provide structure Absorb nutrients Store energy Provide insulation Protect organs from shock Provide water Provide water proofing
What are fats made out of?
3 fatty acids + 1 glycerol
True/false
Fats are solid in animals
True
True/false
Water is an organic food
False. Water is an inorganic nutrient
Define inorganic molecules
Occur naturally
Define organic molecules
They are molecules that have to be synthesized by plants
Give two examples of polysaccharides
Cellulose
Glycogen
