What is yeast autolysis?
What happens to yeast during slow second fermentation and ageing - it digests itself

You remove the yeast - traditionally you tip and jiggle so yeast cells slide into the bottle nech (RIDDLING)
How does the yeast come out in the traditional method?
It gets blown out by the increasing pressure.
What is dosage?
The amont of sugar added after yeast removal
What does the term Brut mean?
A dry sparkling wine
Is sugar added during the second fermentation of a Brut wine?
Yes, but we don’t taste it because of the high acditiy of most sparkling wines
What do you call the method of removing yeast that relies on using a stainless steel tank and a filter?
The transfer method
What flavors do you develop in a sparkling wine because of bottle fermentation?
Yeasty, bready and biscuity
What do you see on a wine label if it was bottle fermented?
Bottle fermented, method traditional
What is Champagne?
It is an AC in France and the only region that can label a bottle as champagne
What are base wines for Champagne?
Pinot Noir, Meuniere, and Chardonnay
What is the flavor profile of a premium champagne?
Green and ctirus fruit notes (green apple, lemon) with high acidity and bready notes from yeast autolysis (bread, biscuit, toast)
What is the flavor profile of a premium champagne that has been aged?
You develop in addition to fruit and autolytic flavors, also vegetal, nutty or honeyed complexity
What does Cremant designate?
A sparkling wine made in France not in Champagne

Samur in the Loire valley, chenin blanc
What is Cava?
Sparkling wine made in spain - must be the traditional method

In Spain in Catalyuna

What grape is Prosecco made from?
Glera
What do the terms spumante and frizzante mean?
Spumante is fully carbonated and frizzante is moderately so
Where is the Asti DOC and what grape is used?
Northwest Italy Piemonte and the muscat grape
What is Moscata d’ASti
Like an Asti but less alcohol, less carbonation, more sweet
What is Sekt and where does it come from?
This is the German word for sparkling wine and it can come from any EU country
How is a proseco different in profile than an asti?
Proseco is medium body with stone fruit while asti is light body with floral and fruity flavors
