A grower whose grapes are vinified at a co-operative, but sells the wine under his own label.

A firm, not a co-operative, set up by a union of often related growers, who share resources to make their wines and collectively market several brands.

The person or machine that oversees and executes the riddling process in developing Champagne.

An automated riddling device that holds 504 Champagne bottles.
What is “riddling”?
Turning and tilting a bottle of Champagne by fractional increments until the bottles are inverted with the neck pointing downward, collecting the yeast sediment at the neck of the bottle.

What is the Methode Ancestrale?
The oldest method of creating sparkling wine. It only has a primary fermentation and is then bottled w/out liqueur de tirage. After fermentation is complete in the bottle, the wine is disgorged, filtered and rebottled w/out dosage.
What is the Charmat Process or Tank Method?
Creating sparkling wine by adding liquer de tirage to the wine in a pressurized, enamel lined tank, or autoclave. Once the appropriate pressure is reached, the wine is chilled (halting fermentation) and then filtered and bottles.
