What is the aroma of corked wine?
musty, moldy, wet basement
What is the source of cork taint?
mold on and in bark of a cork oak tree
What is the chemical that causes a corked wine?
2,4,6 trichloroanisole or TCA
What is the recognition threshhold for TCA?
low; 2 - 7 parts per trillion
What are the 3 chemicals that could appear in wine resulting from sulfur?
sulfur dioxide (SO2), Hydrogen sulfide (H2S), mercaptan
What causes a wine to smell like burnt matches?
sulfur dioxide
How is SO2 related to pH?
the more acdic the wine, the more pronounced the SO2 will be.
What causes wine to smell like rotten eggs?
If sulfur rich wine sits too long with absence of oxygen, hydrogen sulfide forms
What sulfur risk is there for screw cap wines?
hydrogen sulfide since no oxygen gets through the cap
What causes wine to smell like garlic / onions?
merceptan - result of sulfur and ethanol combining
What is the most serious of sulfur compounds?
merceptans; no way to fix
What are the 2 bacteria that can survive the acidic environment in wine?
lactic bacteria and acetobacter
What is the odor of acetic acid?
vinegar
What is the odor of butyric acid?
rancid butter or spoiled cheese
What is the odor of lactic acid?
sauerkraut or goat
What is the odor of ethyl acetate?
fingernail polish remover or airplane glue

when acetic acid and ethyl acetate combine

swetty, horsy, ‘band aid like’, medicinal

smell of leaves from using underripe grapes

Bacteria that can convert alcohol into acetic acid
What is the smell of oxidized wine?
nutty, carmelized like fino sherry. Can brown a wine; mute the fruit flavors
What is the smell of materized wine?
cooked or baked odor from excessive heating
