2015: Costador Terroirs Mediterranis: Macabeo, “Presa Romana 1905”
From Macabeu vines planted in 1905 (111 years old) on 1.5ha of clay, stony calcareous soils. The grapes are hand-harvested at the end of September and undergo sorting and de-stemming before two days of maceration. Fermentation takes place in 300-2500L vessels using indigenous yeasts that lasts four weeks with temperature control. The wine spent 7 months on lees, with battonage every day for the first week and completing natural malolactic fermentation. The wine is then aged in used barrels of 500-600L. No Filtration.
The estate uses uniquely ‘Select Bio 100 Normacoc’ corks which are composed of a sugar cane polymer with zero carbon footprint and zero TCA allowing the wines to evolve the same way naturally.
