Carbohydrates Flashcards
What are the two types of carbohydrate the provide energy?
SUGARS and STARCHES
How much energy in our diet should come from carbohydrates and which type?
At least half
Starchy carbohydrates.
What other nutrient can be classified as a carbohydrate?
NSP fibre
What is the function of carbohydrate?
Our main source of energy
Approximately 50% of our daily diet
They oxidise to release energy
Aid cell division and muscle contraction
Complex carbohydrates (starches) help fill us up and are rich in vitamins, minerals and proteins.
NSP isn’t digestible but prevents constipation and bowel disorders.
What are the various types of carbohydrates? Name the type of carbohydrate too.
Monosaccharides - sugar (simple) - glucose and fructose
Disaccharides - sugar (simple) - sucrose
Mono and Di = 1&2 - easily digested into glucose
Polysaccharides - starches (complex)
Poly = 3 - complex.
What are the sources of mono&disaccharides?
And what is the risk of these sources?
Sugar Jam Honey Lactose Fruit These rot teeth as it combines with bacteria to produce acid.
Explain starches
They are a polysaccharide where more than 2 monosaccharides have joined
They are long chains of glucose molecules - the complex structure means glucose breaks down slowly which releases energy slowly.
They contain good quantities of micro nutrients - vit B, C, calcium and iron.
What are sources of starches?
Cereals
Root veg - carrots, potatoes
Pasta - flour based products.
