Delicate red-berried fruit, subtle wild flowers and biscuity notes. On the palate, it is dry with a vibrant, creamy mousse and persistent pinprick bubbles.
It was aged between 25 to 30 months on the lees before disgorgement and dosage. It is brut style with 7-8g/l dosage.

After manual harvest, the bunches are destemmed and crushed, and the must is left to macerate with the skins for about 18 hours. Fermentation with native yeasts in temperature-controlled stainless steel tanks (18-20°C) lasts about 25 days. After fermentation, the wine spends six months in stainless steel and a minimum of two months in bottle before release.

A

There are at least five strains of Lambrusco is Emilia-Romagna; Sorbara, Grasparossa and Salamino in Modena and Maestri and Malbo Gentile in Parma. Salamino has tight bunches and thin skins. This gives both concentration and elegance.

Luciano Saetti

A

Organic. Began bottling his own wine in 1998 after working as an egg distributor (!) and selling his family’s grapes to the local co-op. The original plantings are from 1964. He stopped using SO2 in 2006 after a gradual reduction year after year. 2007 was the first vintage completely without sulfur. The labels are actually made of fabric (looks like black denim) and each bottle has a little paper note under the capsule.

Weingut Niklas, Alto Adige

A

Dieter Sölva is a young winemaker from the tiny village of St. Nikolaus, high up on the west side of a majestic valley that leads north through the Dolomites. The altitude of these vineyards gives the wines an excellent backbone of acidity, even in the atypically hot 2003 vintage; the white wines are vinified in stainless-steel with no malolactic fermentation and no oak, allowing the wine to show the true flavors of the earth. It is very typical of the region that the wines are impeccably clean.

A

Pigato and Vermentino are one and the same variety”, but Ligurian growers disagree. The grapes certainly don’t look the same in the vineyard, and the resulting wines taste different, even when vinified the same. The name “Pigato” comes from a dialect word meaning freckled and refers to the spotted appearance of the grape skins.
