.50 oz (1 puree pump) Monin Peach Puree
6 oz Sparkling Wine
Garnish - frozen peach slice in glass
What’s the procedure for the Fresh Peach Bellini?
Drop a frozen peach slice into a champagne glass. Add peach puree to glass. Add small mount of sparkling wine to the glass and stir with a bar spoon to mix wine and puree. Tilt champagne glass slightly, and slowly fill glass with sparkling wine. Quickly stir drink again at time of service to make sure puree hasn’t settled to the bottom of the drink.
What’s in the Fresh Tomato Bloody Mary - K.A.B.M?
1.5 oz Absolut Citron 3 oz Bloody Mary Mix 1 Lemon Wedge 1 level size 100 scoop Horseradish Garnish - 1 celery stalk and a skewered cherry pepper
What’s the procedure for the Fresh Tomato Bloody Mary - K.A.B.M.?
Squeeze lemon wedge in pint glass and drop in. Add horseradish, then pack the pint glass with ice. Add Absolut Citron and house-made bloody mary mix. Muddle well until tomatoes are puree-like. Put a celery stalk into a parfait glass and fill glass with ice. Shake 10 times with a shaker tin and strain into the prepared glass.
What’s in the Passion Fruit Mimosa?
1 oz OJ
.50 oz (1 pump) Monin Passion Fruit Puree
4.5 Sparkling Wine
Garnish - orange peel

Pour oj into a champagne glass and pump in passion fruit puree. Stir with a bar spoon to mix oj and puree. Tilt champagne glass slightly, and slowly fill glass with sparkling wine. Quickly stir drink again at time of service to make sure puree and oj hasn’t settled to the bottom of the drink.
