Brewing Flashcards
What is residual causticity?
The amount of caustic in solution that has not yet reacted.
What does DMAIC stand for?
Define
Measure
Analyze
Improve
Control
How do you calculate IBU’s?
(Mg hops * AA% * util %) / cool wort
What is sensible heat vs latent heat?
Sensible heat is the amount of energy from 0°C-boiling.
Latent heat is the amount of energy required to change phase from liquid to gas.
What kind of glycol is safe for brewery use?
Propylene glycol.
What is the purpose of the boil?
Denature enzymes
Coagulate proteins and tannins
Hop isomerization and solubilization
Volatilize aroma compounds
Semi-Sterilization of wort
Concentrate the wort
How does mash thickness affect the beer?
Thicker mashes lead to better fementability mashes with less extract overall. Thinner mashes have better extract with less fermentability.
What is the difference between SS 304 and SS 316?
304 is Cr Ni and is less expensive
316 is Cr Ni Mo and is more resistant to corrosion
