Describe the difference between a lager and an ale, as you would to a guest.

A

A lager is fermented cooler and uses a bottom fermenting yeast which makes them lighter and crisper wheras an ale uses top fermenting yeast and is fermented shorter so more robust and complex

From gippsland, a Gose is a German wheat beer sour that almost died out as a style and now having a renaissance and it features seaweed and salt which really pairs well with our food.

The whiskey section is to the back and there are so many due to its cultural importance in Asian countries particularly Japan and India. These cou tries have now started making their own and as a result we feature them.

An aperitif is a drink that is designed to be consumed before food, it is often but not exclusively light, fresh with good acidity which can help stimulate the gastronomic system. An example would be NV champagne or a Chu Hi 1 Verbena + Lemon

A digestif in contrast to an aperitif is designed to be consumed after food. Traditionally these have an element of bitterness and an element of sweetness to counteract the bitterness an example would be a hanky panky cocktail or amaro Montenegro

What is a whisky highball?

A

In Japan there are two common ways of consuming spirits, Mizuwari and Oyuwari Oyuwari is a portion of spirits mixed with warm or hot water and mizuwari is with cold water. The ratios are very important and designed to lengthen the spirit to unlock all of its flavours. A whiskey highball is an example of Mizuwari but a fusion of legacy and modernity where carbonated water is utilised.
