What does blending aim to achieve?

A

-constant style
-reduce influence of vintage
-retain specific style of house
-reduces risk if bad vintage (frost etc)

How can storage of reserve wines make a difference?

A

-large vols= ss= reductive= adds complexity of final wine
-or old oak= mildly oxidative notes
-or in mags- eg bolly
-or keep in perpetual reserve= younger and older wines= complexity

Describe how blending can affect rose wines

A

-blend still dry red w white base
-some= contact with black grape skins eg Laurent Perrier
-NB- yeast absorbs colour pigments from wine during each ferm= achieving desired colour needs expertise and experience
