Non-reducing sugars

Answer 1

1. Add 2cm3 of sample to a test tube
2. Add equal volume hydrochloric acid (to hydrolyse)
3. Heat in gently boiling water bath for 2 minutes
4. Slowly add sodium hydrogen carbonate until it stops fizzing (neutralises acid so Benedict’s can work)
5. Test with pH paper to check solution is neutral or alkaline
6. Run test for reducing sugars
   Blue -> Orange/brown
