Growing Environment
Warm Mediterranean climate with 500mm rain. Altitudes up to 600mm for high diurnal ranges, cooling influence. Breezes from balkans also cool. Retain acidity, extend growing season for longer ripening and aromatic intensity.
Clay, limestone, and volcanic soils (stony, lava, ash layers). Volcanic layers provide drainage and the clay and limestone hold water.
