B3.3 the chemistry of food Flashcards
What are the main compounds that make up the structure of the cell
carbohydrates, lipids and proteins
what are carbohydrates broken into, and then whats their use?
glucose, which is used in respiration to release energy
what are lipids made up of?
three fatty acids joined to a molecule of glycerol
what are proteins made up of?
long chains of amino acids
what is the food test for carbohydrate- starch?
iodine test
what will happen if the test for starch is positive?
orange/brown will turn blue/black
what is the food test for carbohydrate- sugars
benedicts test
what will happen if the test for sugars is positive?
green/yellow will turn brick red
what is the food test for lipids
ethanol
what will happen if the test for lipids is positive
colourless to cloudy
what is the food test for protein
Biurets test
what will happen if the test for protein is positive
blue will turn purple
Safety for food tests practical?
- ethanol is highly flammable- keeps away from flames
- biuret solution is corrosive- wear eye protection
