Q

Why is it important that the ATC person “fluffs” the meat adequately before placing the setup in the steamer? Give 2 reasons.

A

Meat and cheese should be made in the size of the roll that is ordered and be fluffed or spread out to allow proper heating of the meat and cheese in the steamer. It should be in proportion to the size of the roll.

Q

The ATC is responsible for maintaining the rotation of the meat and cheese setups in the steamer, to ensure that the correct meat and cheese goes on the correct bread. True or False

A

True: A TC is responsible for steamer rotation using the A/S marker . The A TC places the setup in the first steamer then continuously rotates from steamer to steamer in progressive order. This ensures that all steamers are hot and setups are in order with the dressed bread coming from the sandwich line.
