Gambas al Ajillo
8oz. of shrimp butterflied, no shells. Sauteed in butter, garlic, shallots, and dried chilis (red pepper), and a hint of sherry with crispy baby potatoes

8oz. of calamari (rings and tentacles mixed), battered with buttermilk and seasoned flour, flash fried and served crispy.
About two ounces of sweet potato chips is added to give volume and contrast to the dish. It is topped with charred peppers, aji amarillo and cilantro creme verde.
