“Our Fried Green Tomatoes feature two slices of unripe beefsteak tomato soaked in buttermilk, then breaded in a mixture of cornmeal and flour, and fried until golden brown. The tomatoes are served over a Shoepeg Corn Sauce, which is a creamy blend of sweet corn, onions, and butter, thickened with flour and finished with a dash of Tabasco for a subtle kick. The dish is topped with Sweet and Sour Cabbage made from red cabbage, red wine vinegar, and salt for a tangy finish. Finally, it’s garnished with sweet and smoky applewood-smoked bacon, candied with brown sugar, adding a delectable crunch.

“Our Shrimp and Grits appetizer features locally sourced sweet Georgia white shrimp. Four peeled and deveined shrimpare sautéed in butter with salt and pepper and served on top of a Cheddar Grit Cake made from Geechee Boy grits mixed with yellow cheddar, cut into triangle shapes, coated with all-purpose flour, and fried. The dish is finished with a savory Country Ham Gravy made from country ham pieces sautéed until crispy, then added to reduced heavy cream.

Description:
“Our Southern Nachos start with pork shoulder, braised in ginger, garlic, mirepoix, and Cheerwine BBQ sauce, then served on six individual blue corn tortillas fried to a perfect crisp. The nachos are topped with smoked avocado puree made from avocados, cilantro, salt, lime juice, and pureed to a smooth consistency. They are drizzled with Sweet Baby Ray’s BBQ Sauce and finished with a blend of white and yellow cheddar cheese.

The shrimp are tossed in Texas Pete hot sauce, salt, and pepper. They are served on a bed of Jalapeño Bacon Slaw made from red and green cabbage, carrots, jalapeños, diced bacon, cilantro, mayo, sugar, honey, salt, and cider vinegar. The dish is accompanied by a side of our smooth blue cheese dressing.

Cheese Plate
Description:
“Our Cheese Plate includes three daily selections of cheese: Thomasville Tomme, a local Georgia cheese with a buttery, tangy flavor and smooth texture; Drunken Goat cheese, a semi-soft goat’s milk cheese from Spain soaked in red wine, giving it a fruity flavor and a striking purple rind; and Manchego, a well-known sheep’s milk cheese from Spain, aged to achieve a nutty, tangy flavor. These cheeses are served with grit chips made from cornmeal, flour, water, salt, rolled in a pasta machine, and fried. Accompanied by guava fruit cooked down with sugar until it forms a paté de fruit, a small chunk of Capital Bee honeycomb, seasonal berries, and a fig and orange jam made from figs, sugar, and orange pieces cooked to a jam.
