What are steroids?
Lipid with a structure consisting of four fused rings known as a steroidal backbone
What is the function of lipids in the body?
They contain stored energy that is released when they are broken down during respiration in cells
What are iodine numbers?
Degrees of an saturation
What does the iodine number show?
The more unsaturated oil is the higher it’s iodine number will be
What are the two main causes of fat rancidity?
Hydrolytic and oxidative rancidity
when does hydrolytic rancidity occur?
When the fat breaks down by hydrolysis reactions, which occur, using the water present in food, and the enzyme lipase, that can be favoured in the presence of certain bacteria and high temperatures
When does oxidative rancidity occur?
When unsaturated fats react with oxygen from the air, the site of reactivity is the carbon to carbon double bond in unsaturated triglycerides.
How can oxidative rancidity be reduced?
It can be controlled, but not eliminated by the addition of antioxidants
