Energy it takes for 1 gram of water to evaporate to become water vapor. hydrogen bonds must break for this to happen.

The polarity of water allows this to happen because we see it is able to attach to itself but also other substances because of the H ion.
Solvent of life
The polarity of the water makes H2O a good solvent because many times if it is hydrophilic it will dissolve nicely in water.
