What are micro-organisms?
Micro-organisms are living beings that are invisible to the naked eye; you need a powerful microscope to see them.

What is a microbe?
A microbe is a single micro-organism.
They are the smallest and simplest forms of living beings because most of them are single-celled.
Microbes come in many different shapes, sizes and varieties.

True or False - On your hands are there more microbes than people on the planet?
YES!
In fact, there are so many microbes that scientists have only named 0.5% of them.
Are microbes vital to life?
YES!
They outnumber all other species and make up most of the living matter on the planet.
They are EVERYWHERE!
Are microbes harmful?
Some are harmful, most are useful.
What is yeast?
Yeast are single-celled fungi.

Explain how fermentation occurs.
Yeast cells digest food to obtain energy for growth. Their favourite food is sugar.
The process, fermentation, produces useful end products, carbon dioxide (gas) and ethanol. These end products are released by the yeast cells into the surrounding liquid in the dough.
What happens to yeast in the bread making process?
In bread baking, when yeast ferments the sugars available from the flour and/or from added sugar, the carbon dioxide gas cannot escape because the dough is elastic and stretchable. As a result of this expanding gas, the dough inflates, or rises.
